A Guide To Distilleries

“When we started off we didn’t have any money,” says Sid Dilawri. “But we had a vision.” His vision: a beautiful bourbon. Dilwari bought an old apple packaging warehouse in Maurertown in the Shenandoah Valley to start a distillery. His brand, Filibuster Distillery, has been around for three years, but the production facility won’t be open until this fall. In the meantime, he hosts tastings of his spirits at his family’s liquor store in Washington, D.C. This is a story—another new distillery in Virginia—we almost didn’t even print: We received an email about it as we were closing the issue. But how fitting, we thought.
