Where: Bistro 360, 1800 Wilson Blvd., Arlington
Taste: Put an egg on it is my personal rallying cry, so when I first learned of khachapuri, a Georgian cheese bread decorated with an egg, I headed to D.C.’s Compass Rose, a new restaurant that received tons of press for the dish.
It’s a simple thing really: baked dough, shaped like a canoe, with lots of butter, cheese and an egg yolk, swirled together tableside.
Now there’s a version in Northern Virginia, at the newly opened Bistro 360. While Bistro 360’s version is a little less luxe—the yolk is served intact with the white which doesn’t allow the yolk to meld with the cheese and become it’s own creamy sauce—it’s still a fantastic bar snack with a side of dark beer. The crust is chewy and reveals an herby essence. Plus it’s fun to eat, pulling apart the bread and dipping it into the yolk. Start your year with a little indulgence.
