Hot Opening: Wooboi Chicken in Herndon

Plus, after a decade, Maple Ave Market closes.

“We don’t mess around here,” is what the man behind counter said to the customer who just ordered the hottest of the hot: level Cold Blue for a chicken sandwich. It’s described as super extra hot and also includes an extra warning: waiver required.

The waiver, it seems, is a signature inked on a chalkboard-painted wall where language alleviates liability of the new Nashville-style hot chicken shop, Wooboi Chicken. From a quick glance, there’s about 50 signatures. It opened less than two weeks ago.

I didn’t feel like expiring in a Herndon strip mall, so I went with a level two chicken sandwich and a level three chicken wing. Both were hot, but enjoyably hot. Deliciously hot. I’ll be writing much more in a future issue, but until then, check out Wooboi Chicken. And remember, when you’re at the counter deciding the fate of your taste buds, the yelps of a man who could barely speak after a bite of Cold Blue: “I didn’t think it would be this crazy.” // Wooboi Chicken: 139 Spring St., Herndon
