Taste: If you’re a fan of tripe in pho, get pumped to see it fried and wrapped in two soft corn tortillas at Taco Bamba. Beef’s small intestine is mostly flavorful fat holding every drop of the oils it was fried in. Each sweet piece is a bit chewy, remarkably succulent and sprinkled with cilantro. The delightful juxtaposition of crunch and juice was pivotal in temporarily taking my mind off the fact that I was eating animal innards.
