A Trummer’s Coffee & Wine Bar Is Coming to Fairfax

The new shop is slated to open in the Twinbrooke Shopping Center.

For 17 years, Trummer’s in Clifton has been synonymous with destination dining, and for the past decade, Trummer’s Coffee & Wine Bar in Gainesville has built a loyal following. Now, Victoria and Stefan Trummer are bringing their talents to Fairfax. 

Trummer’s Coffee & Wine Bar will debut in the Twinbrooke Shopping Center on Braddock Road this fall. 

“We want it to feel like a neighborhood spot,” says co-owner Victoria Trummer. “It’s a place that you should feel comfortable coming to any time of day, whether that’s to plug in your laptop and work or to come to happy hour with friends, or dinner.” 

New, Larger Setting 

Trummer’s Coffee & Wine Bar will carry the same DNA as Trummer’s in Clifton and the Gainesville cafe, just in a larger, brighter setting. The 2,500-square-foot space will serve breakfast all day alongside coffee, cocktails, and an expansive menu. Plans include a large bar, abundant natural light, and outdoor seating. 

“We wanted to expand and give more opportunity for people to sit at the bar and drink our delicious cocktails,” Trummer says. The new location will feature many of the same beverages and drink specials that guests enjoy at its sister locations. 

The menu will mirror the Gainesville location, offering a variety of signature paninis, pastries, and chicken schnitzel. Quiche, beignets, and popular truffle fries will also be served. 

“It will be an Austrian-European cafe scratch kitchen making all of our pastries in-house,” she says. “A lot of the pastry recipes are Stefan’s mom’s.” 

A Community Meeting Spot 

Trummer says the Fairfax space is envisioned as a community living room — a place for morning lattes, afternoon lunches, cocktails with friends or dinner. 

“If you just want to grab a coffee on the go, we’ll be your coffee to go,” Trummer says. “But we’re also your place where you can get excellent service and sip on that coffee without pressure to do anything else.” 

The design in this newest Trummer outpost leans warm and welcoming, with comfortable seating and natural light. 

“All three of our Trummer’s locations are going to be unique and different, but there’s going to be some tie-in that we’re excited about,” she says. “We’re slow to grow because we do everything ourselves, but we’re ready now.”
