Harrimans Grill at the Salamander Middleburg Has a New Chef

A former executive chef at Michelin-starred Pineapple and Pearls will join the restaurant’s team.

Harrimans Grill at Salamander Middleburg has announced Bin Lu, formerly of the Michelin-starred Pineapple and Pearls, as its new chef de cuisine.  

Harrimans, the onsite restaurant at the Salamander, specializes in locally driven modern American cuisine, which is based on the “bounty of Middleburg’s surrounding farms, butchers, and specialty sourced seafood from coastal water.” It’s been a consistent presence on Northern Virginia Magazine’s 50 Best Restaurants list for several years, landing at No. 5 in 2024.

In his new role, “Lu will showcase the rich agricultural bounty of Virginia through seasonal, ingredient-driven menus,” according to a news release. 

“I’m both excited and humbled to be joining Salamander’s exceptional team,” Lu said. “I look forward to working with the Harrimans team and helping create memorable experiences within this stunning setting.”

Lu joins Harrimans with 15 years of experience. He was previously the executive chef and general manager at The Restaurant at Blue Rock in Washington, Virginia. Before that, he was executive chef at Pineapple and Pearls, a Washington, DC, modern American restaurant known for its playful tasting menu and two Michelin stars.  

“We are thrilled to welcome Chef Lu to the Salamander Middleburg family,” said Scott Little, managing director of Salamander Middleburg. “His commitment to culinary excellence and boundary-pushing creativity aligns beautifully with our vision for Harrimans Grill as one of the region’s most exciting and elegant dining experiences.”
