When craving noodles, these uncommon ramens are the bowls to beat

Vegetarian broth, Hokkaido-style, and Thai-inflected ramens from around the region stand out from your average bowls.

Though the noodles give it its name, ramen is, at its heart, all about the broth. Traditionally, that means long-stewed pork bones. But vegetarians have ample opportunities at this national chain. In fact, our favorite bowl here is the spicy, creamy vegan ramen, dotted with red chile and black garlic oils. 2911 District Ave., Fairfax; 11964 Market St., Reston

Hokkaido Ramen Santouka

Descended from a location in Asahikawa, Hokkaido, this is the place to get a serious bowl of ramen. Cooked for at least 20 hours, the collagenous tonkotsu broth is one of our favorites in the region. The al dente noodles, tender cha siu pork, tangy pickled plum, and chewy fish cakes make every bite a unique treasure. 1636 Boro Pl., Tysons

Umai Ramen & Rice Bowl

The fun of dining here is the ability to choose not only traditional Japanese ramens, but also specialty bowls that lean toward Thailand. Umai Curry Ramen is actually chef-owner Preeyaporn Aroonchokthawon’s take on her native khao soi. The coconut-based broth and fried noodles on top are a rib-sticking treat. 482 Elden St., Herndon
