Hokkaido Ramen Santouka
Descended from a location in Asahikawa, Hokkaido, this is the place to get a serious bowl of ramen. Cooked for at least 20 hours, the collagenous tonkotsu broth is one of our favorites in the region. Umai Ramen & Rice Bowl
The fun of dining here is the ability to choose not only traditional Japanese ramens, but also specialty bowls that lean toward Thailand. Umai Curry Ramen is actually chef-owner Preeyaporn Aroonchokthawon’s take on her native khao soi. The coconut-based broth and fried noodles on top are a rib-sticking treat. 482 Elden St., Herndon
