There are about 20 people behind me, most of them waiting under a chilly, sunless sky nearing the end of the lunch hour. There is nothing but pho here, 17 variations, none of them trendy or pretentious or unusual. Brisket, flank, meatball, tripe, tendon. Order a bowl of pho, of course, and order what you like. Don’t be conned into adoring organ meat if it isn’t your thing. A NoVA institution with its cafeteria-style long tables and total lack of atmosphere, Pho 75 isn’t a place where you need to impress anyone.
