We like new. Shiny. Sparkly. We’re drawn to what we don’t know and what we think will impress us. And this year, we’ve seen new in the Northern Virginia dining scene. Not as many new restaurants, but new faces behind our trusted favorite places. There is usually a grace period when a new chef enters the kitchen, but for this year’s restaurant issue—divided by the top 10 and then by county—we decided instead of waiting for routines to set, we would embrace the frenzy of kitchen unrest. Welcome it. Rank it. Relish beginnings.
