Sidebar Expands With the Addition of A Hip New Bar–And More

The Docket is Leesburg’s latest nightspot, but owner Nils Schnibbe has also quietly added even more food businesses to his long list.

Sidebar. Schmidt’s Barbecue. More Better Restaurant. BKD Bagels. If you’ve eaten in Loudoun County, chances are you’ve dined (or at the very least, drunk) at one of Nils Schnibbe’s restaurants. And those odds are quickly improving. By the end of the month, a second BKD will begin serving Purcellville its signature bagel sandwiches, but Schnibbe has other news. Two weeks ago, he quietly opened The Docket, a sequel to Sidebar, in the building’s carriage house that he previously used for special events and overflow at brunch.

Now, The Docket is open Wednesday through Sunday with a menu all its own. Wednesday is Whiskey Night, which features a slew of enviable pours as well as cocktails like a maple-and-molasses Old Fashioned. The rest of the week, the seven house cocktails include an upscale take on a Pimm’s Cup featuring sparkling lemonade, strawberry, and cucumber. The small food menu is simple, with cheese-and-crackers, sweet potato fries loaded with Brie and house-candied bacon, and General Tso’s cauliflower.

Why head to The Docket instead of Sidebar? “It’s a completely different vibe,” says Schnibbe. “The Docket is a little more rustic, with a warm atmosphere.”

Schnibbe also recently opened a slice shop adjacent to the Tally Ho Theater, Tally Ho Pizza, which is open during shows at the theater, and Halftime at the Virginia Revolution Sportsplex, both in Leesburg. “Halftime, we elevated a little bit from concessions,” says Schnibbe. In fact, many of his popular eats from More Better are on the menu, including the jumbo pretzel with beer cheese and German mustard, a German bratwurst sandwich, and house-smoked pulled pork. There’s also a full bar, perfect for parents braving a kids’ soccer game.
