Sfoglina Reopens With an Updated Menu on Friday

Look for lots that’s new, from pastas to desserts.

Sfoglina in Rosslyn closed just before Thanksgiving. With the looming shutdown of the restaurant’s popular rooftop due to the cold weather, chef-restaurateur Fabio Trabocchi realized that there simply wasn’t enough business in the area to sustain the restaurant through the winter.

But along with the crocuses, the elegant Italian eatery is sprouting back up for the spring on Friday, April 2. Longstanding favorites like the mozzarella bar are returning. The cheesy feature will include three kinds of mozzarella with add-ons including vegetables, prosciutto, and flatbread.

But much of the menu will be new for spring, with dishes debuting simultaneously in Rosslyn and at the Van Ness location. Spring pastas include mafalde primavera with fava beans, peas, asparagus, and tomatoes; and Piemontese agnolotti with veal osso buco, orange zest, and spring sage. Lasagne verde with ragu Bolognese and Parmigiano, as well as Amalfi Coast-style squid ink paccheri with Maine lobster and chiles are seasonal pasta specials meant to be shared.

Looking for something meatier? There’s Roman-style porchetta with spicy salsa verde, dill, and black peppercorns. For a full meal that would  make perfect sense in Milan, diners can sup on the osso buco with light saffron orzo.

Desserts include four new options, such as vanilla panna cotta with spring strawberries, and Capri chocolate cake with pistachio and whipped cream. Sfoglina will be open for dinner from Thursday to Sunday. // 1100 Wilson Blvd., Arlington
