Tim Ma hands Water & Wall kitchen duties to chef John Leavitt

The Arlington restaurant now has a new lead in the kitchen.

When Water & Wall opened in late 2013, Tim Ma was still new to the restaurant scene. He was known for the tiny but darling, eclectic but homey Maple Ave Restaurant.

Less than three years later, Ma opened a sandwich shop in Vienna (Chase the Submarine), an upscale restaurant in D.C. (Kyirisan), sold almost all of his stake in Maple Ave and now is officially out of the kitchen at (but is still the owner of) Water & Wall. Taking over is John Leavitt, most recently of Provision No. 14 in D.C. and previously of Falls Church‘s 2941.

Leavitt, says Ma, will “lean toward a more progressive American, technique-driven” menu, with, for example, kiwi sashimi and confit squab leg. He starts this Sunday and is expected to roll out a fully fleshed-out new set of dishes by the beginning of July. 

Also new for the Tim Ma Restaurant Group: a pastry chef. Ma is currently interviewing for someone to lead all of his restaurants.
