Red Truck Bakery Debuts Its Oomami Biscuit

Field & Main and Red Truck Bakery collaborate to create a brand new breakfast sandwich.

If you can’t get enough of Field & Main’s Oomami Burger, voted the best burger in our 2023 Nova Wars: Burger Edition, then you must try the Oomami Biscuit — the new breakfast version now available at Red Truck Bakery.

The new breakfast sandwich features local sausage, eggs, melted cheese, housemade pepper jelly, and Field & Main’s Oomami condiment served between a flaky, freshly baked Red Truck Biscuit. It’s available at both the Marshall and Warrenton locations of Red Truck Bakery.

The idea came about after Neal Wavra, chef and owner of Field & Main, took over the Red Truck Bakery and began looking to integrate the two businesses through sourcing products, starting with the whole hogs used at the restaurant. 

“The Oomami Biscuit allows us to use the shoulder and the hams to make sausage, making full utilization of the animal and [it] enables us to purchase an additional hog, which is a win, win, win,” he says.

The bakery uses different cuts of the same hog to make both sandwiches, but what brings the two together is the Oomami condiment, which is a mixture of bacon jam and pickled shiitake mushrooms.

“The result was tasty, but needed an extra dimension,” says Wavra. “The solution was a pepper jelly. This spread is sweet and a touch spiced. Thus, a spectrum of tastes were represented: sweet, salty, sour and savory — all amplified by umami!”

Fans of the original burger and bakery love the combination of flavors. According to Wavra, the initial and continued reaction surrounding the new offering remains great.

“One woman shared that she drove out to pick up a biscuit for her and her husband and ate hers before getting home,” says Wavra. “So delighted by the sandwich, she contemplated whether to eat her husband’s and not tell him.”

The Oomami Biscuit is just the start of collaborations between Red Truck Bakery and Field & Main. 

“The two operations will continue to work together to leverage relationships with local farmers and artisans to make products that nourish and delight our community,” says Wavra.
