Get Cracking: For National Egg Month, go beyond your usual scrambles

Eggs are a powerful symbol of the renewal spring brings. More prosaically, they’re also 70-calorie sources of protein that are individually wrapped and ready to go. Now that a new season has arrived, it’s time to celebrate the many ways that the world dines on our chickens before they’re hatched. Across NoVA, here are some of the most delectable ways to savor a yolk.

Egg Tapori

Bansari Indian Cuisine chef/co-owner Deepak Sarin has created a whole section of Indian egg dishes on the menu, but our favorite is this warm, cheese-blanketed take on deviled eggs. Its yolky filling pops with earthy spices. 2750 Gallows Rd., Ste. H, Vienna

Desayuno Campesino

Over-easy centers burst to combine with the creamy refried black beans on this Salvadoran farmer’s breakfast plate at La Estación Restaurante. Spread them in a homemade tortilla with fried pork, a sweet-corn tamal, and cheese. 525 E. Market St., Leesburg

Tornado Omurice

This Korean interpretation of the soothing Japanese omelet is rosette-shaped thanks to the Lab No. 1 Asian Bistro chef’s deft work with chopsticks. Inside, fried rice contains charred onions and bacon. 14107 St. Germain Dr., Centreville

Shakshouka

These saucy North African eggs are all the rage, but we like to relish them al fresco at The Secret Garden Cafe, a ladies-who-lunch hot spot. This version features poached eggs in a tangy tomato-pepper-and-onion stew accompanied by fresh pita to scoop up every bite. 404 Mill St., Occoquan

Egg Skillet and Toasted Roll

Brunch at Tiki Thai, a new restaurant from the Sense of Thai St. team, is full of fun fusion, including this pair of fried ova loaded with a sweet-and-savory blend of minced chicken, shrimp, Chinese sausage, and fried shallots.
