When a dessert is tied up in the identity of an entire nation, it isn’t something you alter lightly. (We’re talking about the basis of the phrase “as American as apple pie,” after all.) But that ubiquity can also become boring after a while—just think of your slice’s infamously plain companion, a scoop of vanilla ice cream. And when a classic formula becomes overplayed, it’s ripe for experimentation. Fortunately, pommes-obsessed bakers around the region have risen to the challenge. Here are the slices that will expand your conception of apple pie.
