EAT IT The loosely formed patties, full of herbs and held together with a little dough, are fragrant and meaty. They’re not at all like meatballs, more tender and crumbly, like falafel. But still its own creation: the patties are familiar, but different. The bread, like a fluffy, more delicious, pita, is split open to welcome the patties and a bit of salad. Don’t overthink it.
