Find samosa chat, a typical stuffed samosa, split open and covered with chickpeas, tomatoes, onion and cilantro, plus yogurt and tamarind sauce. It’s like, there’s joy in a single scoop of ice cream, but then that scoop can also act as the base of a sundae and it’s even better. Tomato soup is basically buttery sauce with tomato flavoring and is just as rich as it sounds. Palak chat is a modern marvel as spinach is fried to a crisp and then dressed with tamarind and yogurt.
