Taco Bamba, the quirky, modern taco shop from chef Victor Albisu, will open a fifth location in Fairfax’s University Mall next Thursday, Dec. 6.
The usual suspects of chicken tinga, carne asada and al pastor will be on the Mexican-inspired menu, as will a slate of newfangled options, like the Robinson Ramen with noodles, shoyu carnitas, salsa machado, canned corn and togarashi tartar. Also new: Savage Sub-Mariner with shrimp, calamari and a citrus arbol romesco; Ol’ Mick Nugget with crispy chicken thighs and a “hot sweet ‘n’ sour bbq mustard;” Mr. Chow filled with General Tso’s cauliflower; and Fairfax 4-Way showcasing blistered brussels sprouts and granola.
