April is National Grilled Cheese Month. Though we don’t put too much stock in these made-up food holidays, we think melty cheese between buttery layers of bread is worth celebrating. Pick one up anytime, but don’t miss out on taking part on April 12, National Grilled Cheese Sandwich Day.

Bring the gooey goodness to you with this gourmet food truck focused entirely on cheese. The truck features seasonal grilled cheese sandwiches, from the St. Patrick’s Day Irish Stout to the July 4th Bread White & Blue. Called the F.G.T’ Grilled Cheese, this sandwich is made with fried green tomato, house pimento cheese, and pickled red onion on a brioche bun.
