Every year Pericles Konstas flies to his family’s olive orchards in southern Greece during the end of harvest season. This year, the Vienna native was surprised to see the wild trees producing such peppery and fruity olives. He says they’re like the more common corinacis variety “on steroids.” Plus, he notes, only recently has research proved these wild olives contain high amounts of polyphenol (protective antioxidants). For the first time, Konstas’ Spartan Oil brand will release Founder’s Reserve ($26) and Reserve Batch π ($16), a blend of farmed and wild olives. These special-edition oils debut this month.
