Rejoice, Centreville: You have a new Pho 75 location.
The famously cash-only Vietnamese noodle soup spot opened its doors just last Friday, spokesman Dung Phan says. And there are already clear favorites from the menu, though it depends on who’s ordering.
“For Americans, it’s No. 12,” Phan says. That’s slices of eye-round with brisket. Just straight-up slices of eye-round is popular. “It’s the meat.”
Phan says Asian customers “also enjoy the internal part of the cow, like the tendons. (It’s) a little more exotic. And the tripe.”
Pho 75 is not exactly a “family thing,” Phan says, but it does have a lot to do with working together.
As for that 75 in the name, it’s in reference to 1975, “the year when Vietnam fell to the communists,” Phan says. The founders longed for Vietnam, but, “they knew it would be gone.”
Phan says 75 could be a symbol both for looking at the past while also going forward.
The new Centreville location at 6053 Centreville Crest Ln. joins several in Northern Virginia, including Arlington, Falls Church, and Herndon.
