Hot Open: Shinsekai in Vienna

The world of ramen is vast. Though the boom hit years ago—remember when it took all night to wait in line for Toki Underground?—there’s now more nuance to the scene.

Shinsekai Ramen opened in Vienna with a streamlined chicken-based broth lineup. Most ramen shops sell paitan (cloudy, cream broth) and chintan (clear), but this brings a Mom’s-chicken-soup feel to the Japanese bowl. The menu is still in soft-opening phase, but the karaage (fried chicken) is an early winner with crunch and a little sweetness. // Shinsekai Ramen: 234 Maple Ave. E, Vienna
