Not all of the area’s talented chefs decide to set up camp in D.C. NoVA native Jason Maddens, most recently of Vienna’s Clarity, moves closer to his Leesburg home with AhSo. Opened late last year in Brambleton, this modern American restaurant focuses on farm-to-table dining and wine. For the food, the constantly changing menu is based off crop-harvest emails from neighboring farmers, and for wine, the list contains a handful of local bottles and will mostly stay under the $100 mark. The name of the restaurant refers to a type of two-pronged opener used for older delicate corks and Maddens says about 15 percent of his bottles would need the device. Though for its debut week, Maddens’ team uncorked every bottle with ahsos.
