A: People have this view that they’re a final thing, like you have to eat them like you ate them the night before, which can be boring. People get sick of eating the same thing three nights in a row. But the thing about leftovers is, if you cook smartly, you can actually use them as an ingredient.
Instead of a finished dish, they can be part of something new, which is what restaurants do. Restaurants will have a roast chicken and then, if they don’t serve all their chicken, they’ll turn it into a chicken soup the next day. For some reason, people think the word leftovers is boring, so I try to redefine that.
